mix & match meatballs

These are my go-to, no-fail Favorite Meatballs

They come together in minutes with simple, everyday ingredients, and they’re super easy to customize.

Whether you're switching up the meat or adjusting the spices to suit your taste, this recipe is always a hit. (Might I recommend switching up the meat half and half? My current favorite variety is 1 lb beef, and 1 lb ground pork).

Plus, they’re perfect for meal prepping or freezing for those busy nights when you need something quick but delicious!

INGREDIENTS:

  • 2 lbs ground beef (or meat of choice)

  • 1/2 cup breadcrumbs

  • 1/2 cup milk

  • 2 eggs lightly beaten

  • Splash of Worcestershire sauce

  • 1/2 small grated onion

  • 1 clove garlic

  • 1/3 cup fresh parsley

  • 2 tsp salt

  • 1/2 tsp pepper

*** in a pinch I have used dried versions of ALL these spices and the recipe still turns out delicious

STEPS:

  • Preheat oven to 450

  • Line 2 baking sheets with foil + cooking spray

  • Combine all ingredients and mix with your hands until combined (use a wooden spoon if your mixture is too cold!)

  • Form into 1 1/2 inch meatballs, this recipe makes about 30

  • Bake for 12-15 minutes, until brown

There you have it - quick, versatile, and absolutely delicious!

These meatballs are great for busy weeknights or when you want to have something ready to go in the freezer. No fancy ingredients, no fuss—just real, wholesome food made simple. Enjoy!

Macronutrient Breakdown (per meatball, based on 80/20 ground beef)

  • Protein: ~6g

  • Fat: ~5g

  • Carbohydrates: ~2g

(Values will vary slightly depending on the type of meat and breadcrumbs used — if you use half pork and half beef, expect a touch more fat and flavor!)

Leftover Ideas

  • Classic Spaghetti & Meatballs: Toss with your favorite marinara sauce and serve over pasta or zucchini noodles.

  • Protein-Packed Lunch Bowls: Add sliced meatballs to any salad or leftover grain + veggies for lunch fuel.

  • Mini Meatball Skewers: Thread leftovers onto skewers with veggies for a quick snack.

  • Double + Freeze for Later: Store cooked meatballs in a freezer bag/container— they reheat beautifully in the oven or simmered in sauce.
